In hectic times, slowing down is becoming increasingly important. Not everything has to be done in a hurry. One counterpoint to our stressful lives is Slow Food, a global movement promoting enjoyable, mindful and regional eating. For more than two decades, Slow Food Pinzgau has been committed to mindful enjoyment, sustainable agriculture and the preservation of culinary traditions in the region. Through agroecological approaches and conscious consumer choices, the movement is committed to preserving and further developing the biological and cultural diversity of our food. The stars of this year’s gourmet market are therefore heirloom varieties of vegetables, fruit and cereals, as well as traditional livestock breeds. At the Nexus Café, the SLOW FOOD DAYS will continue the theme of ‘heirloom varieties’ with an enjoyable and informative evening. Short talks before, between or after the individual courses will offer fascinating insights into the origins, significance and preservation of this valuable diversity.
